A little over two years ago, we sold a Neapolitan wood-fired brick oven to Baronessa Italian Restaurant in Rockville, Maryland. Recently, we went back to see first hand how things are going. We talked to the Head Chef and Co-owner, Angel Mendoza, to see how he’s been enjoying his oven. When asked about what he enjoys cooking the most, his response was, “Besides my number one passion of cooking pizzas, I also cook all sort of dishes like, Charred Brussel sprouts, our signature wings, meatballs, and we bake our own bread. There’s an unlimited list of things I do with this oven… I wouldn’t have survived in this business/location without the wood-fired Marra Forni Oven.” The three he appreciates most about the oven are that is can be used for “multipurpose”, it’s “efficient”, and it’s“practical”.
Baronessa Italian Restaurant has thrived over the past two years, largely in part due to the quality and absolute freshness of their ingredients, and the consistency of the food.
